Hi,

the 8MHz oscillator Y1 connected to OSC1 and OSC2 is according to EAGLE a RESONATOR-SMD.  Is this a ceramic resonator instead of a quarz, and if so, what is its frequency tolerance?

It might be possible to tell an exact part number by looking in SFE's footprint library:

It just says "RESONATORSMD (RESONATOR)". I managed to find a similar looking one here [1], except that it has 80.H printed on it, instead of 80.L on the CUI32 board. There is a 15 pF version and a 33 pF version available. Which one should be used, or is it not important?

Further it seems impossible to get the MIC5216 LDO. I thought, maybe I can try to build a CUI32 myself, based on the new layout and the new PIC32, but it seems to be more difficult than it should be.

It's usually just a matter of "getting to know your way around" the commonly-used online channels... for example, Micrel will probably send you a free sample of the MIC5216 if you register here:
http://www.micrel.com/OrderSamples.do
And I know Microchip will send free samples of their PIC32s, again you have to register - but most companies don't even charge shipping, so when they say "free samples", they really mean it!
If not, Digikey or Mouser are the best bets (or Farnell might have better shipping prices within Europe) for buying parts. I see Digikey stocks the MIC5216...

And is the 8 MHz resonator of 15 pF or of 33 pF type?
I think Micrel accepted my request for a sample of the MIC5216. In the case of Microchip I was not so lucky. After filling out all the required information and selecting the desired PIC32, they told me this: "We currently do not accept orders for your country. Thank you for your interest in Microchip." :(
If you look up the Microchip offices in Europe in this pdf, the one closest to you can probably send you samples if you contact them directly... I do this in Denmark.

You were right Dan, the actual SparkFun EAGLE library has a bit more information: "Small SMD resonator. This is the itty bitty 10/20MHz resonators with built in caps. CSTCE10M0G55 and CSTCE20M0V53. Footprint has been reviewed closely but hasn't been tested yet."

I were able to locate the 8 MHz version CSTCE8M00G55Z-R0 at Farnell and it has these specifications:
